Job Profile
Sous chefs report directly to the head chef and assist with managing kitchen operations. Sous chefs manage the kitchen's food planning and production processes. They ensure the kitchen is properly staffed and supervise kitchen workers. Sous chefs adhere to standard operating procedures for food quality and ensure the kitchen is compliant with the regulatory requirements for food handling, sanitation and cleanliness.
The following is a summary of the job description for ideal sous chef:

    Ensures budgeted food cost achieved while maintaining quality.
    Ensure Spoilage reports completed and maintained.
    Ensure all food items are controlled against staff theft and pilferage.
    Ensure overhead costs are controlled within budget.
    Ensure Staff meal costs are monitored and controlled.
    Ensure daily food requisitions are completed and accurate.
    Ensure proper storage of raw materials used in the kitchen.
    Ensure Health Standards are maintained.
    Ensure proper teamwork/Relations with co-workers and management.
    Ensure maintenance of kitchen and kitchen equipment.
    Ensure cleanliness of kitchen and the equipment.
    Ensure effective communication in the kitchen.

Requirements:    

Requirement

    The holder of this position should have a certificate in food production or equivalent education or preferably a candidate who have completed a culinary or apprenticeship program.
    Additionally, requirement of at least two years' experience with kitchen operations and staff supervision is neccesary.
